Honey Thyme Granola

This is hands down my favourite granola. It's sweet, its savoury. It's just so good. My favourite way to eat it is with ice cold homemade nut milk or some plain yogurt with defrosted frozen blueberries made into a compote in a sauce pan with a little honey and lemon zest. It is equally good by the handful or even on top of a salad. Especially roasted beets and arugula. I hope you give this one a try and leave it on your counter in a pretty glass jar and devour it all week long!

INGREDIENTs


  • 2.5 cups rolled oats

  • 3 cups mixed nuts, roughly chopped, I use almonds, walnuts, pecans, hazelnuts and pistachios

  • 1/2 cup sesame seeds

  • 1/2 cup fresh thyme leaves, peels off stem

  • 1/2 cup good quality olive oil

  • 1/2 cup honey

  • 1 tsp vanilla

  • 1/2 tsp sea salt

  • flaky sea salt to garnish


Directions


Pre heat oven to 315' and line 2 large baking sheets with parchment paper.


In a large bowl mix together the oats, sesame seeds and, chopped nuts. Set aside.


In a medium skillet combine the olive oil and thyme. Swirl often till thyme is fragrant and sizzling. About 3-4 minutes. Remove from heat and pour in the honey, swirl around till combined. Next add the salt and vanilla and mix again.


Pour the honey thyme oil over the oat mixture and mix thoroughly to combine. Pour the mixture evenly amongst the 2 baking sheets spreading as evenly and apart as possible.


Bake the granola for 40 minutes stirring every 10-15 minutes until golden and crisp. Granola will harden once cooled. Sprinkle with flaky salt.


Once completely cooled break into pieces and store in glass mason jars.



Tips


Granola will keep for a few weeks.


This makes great gifts!


You can replace thyme with fresh rosemary minced as well.
